Red Velvet Pancakes with Powdered Sugar Glaze
A friend of mine is a HUGE Red Velvet fan; because of that, my husband has now become one too!
For Valentine’s Day, I decided to break away from our healthy breakfast eating habits and spoil ourselves a little.
I came up with this recipe, and it was a huge hit!
Batter Mix:
1 1/3 c Red Velvet Cake mix
2 c All Purpose Flour
2 T sugar
1/2 T baking powder
1 t salt
3 c milk*
1/2 cup vegetable oil
1 T vanilla extract
1 egg
*I originally used 2 cups of milk and it was way too thick. I added more after the first attempt and I would suggest 3 cups for a better turn out 🙂
Directions:
1. Heat skillet over medium-high heat.
2. Combine all ingredients in large bowl. Stir until lumps disappear.
3. Pour slightly less than 1/4 cup batter for each pancake onto hot skillet.
4. Cook 1-1 1/2 minutes on each side or until golden brown.
Powdered Sugar Glaze:
Powdered Sugar and water, that’s it! Start with whatever amount of powdered sugar you’d like and add water slowly until a paste like consistency is formed.
Add glaze on top of pancakes and serve!
