Quick Family Meal: Hickory BBQ Beef Sandwiches

Being pregnant, with a toddler, and my husband away for months of training has certainly created a challenge when it comes to cooking dinner. It’s hard enough to get to the grocery store, let alone plan family meals and get them prepared!

When I saw Kraft Recipe Makers hanging out in the pasta aisle next to my go-to Alfredo sauce, I couldn’t wait to give them a try! There were so many options and when I got home and opened it, realized there were even more. Not only do they show you the main recipe on the front of the box, there are two alternate recipes on the inside panel. 
I chose to give the Hickory BBQ Beef a try, and the only reason I was able to choose this over all of the options was because we were having pasta the night before and I wanted to do something completely different than a pasta dish! 
Although Crock Pot meals are fairly easy most of the time, Kraft Recipe Makers makes them even easier. No need to measure out different ingredients; you literally just pour the various sauces in and let them do the rest! Not all of them are Crock Pot meals but like I said, I’m usually crunched for time and this was a huge time saver. 
What you need:
1 boneless beef chuck roast (2-1/2 lb)
7 sandwich buns (I just grabbed a pack of 6)
What’s included:
Brown Sugar & Cider Vinegar Simmer Sauce
Sweet Hickory BBQ Finishing Sauce
1. Add meat to slow cooker. Top with Simmer Sauce; cover. Cook on LOW 8 to 10 hours (or on HIGH 6 to 8 hours). 
2. 30 min before serving: TRANSFER meat to cutting board. Let stand 10 min. to cool slightly and seal in the juices. Pull meat into shreds with 2 forks. 
3. REMOVE liquid with ladle from slow cooker; set aside.
4. RETURN meat to slow cooker; stir in Finishing Sauce. If desired, add some more of the reserved liquid to desired consistency. Increase heat to HIGH; cook, covered, 15 min. Serve in buns.
Once I followed the instructions as directed, I decided to add my own twist to the recipe. One of my favorite restaurants in Cleveland serves their sandwiches with coleslaw and fries on them; so I decided to try and recreate a similar creation with these sandwiches! 
Once the meat was close to being done, I threw the fries in the oven and mixed the coleslaw with the coleslaw dressing. Only took me a few minutes!
I whipped up a quick salad and voila, dinner was served! I think I had the approval from everyone who was invited to dinner 🙂
I can’t wait to try the rest of the Kraft Recipe Makers. For only $2.98 at Walmart, they certainly make it easy to create a delicious meal on a budget, but still allow you to use fresh ingredients. I normally avoid meal kits because of their lack of fresh ingredients but I love the freedom this meal starter gave me.
