Copycat McDonald’s Caramel Iced Coffee

I live on coffee; with two toddlers and a deployed husband, there are no breaks during the day (or night). Nolan’s a night owl and stays awake until I go to bed, and Paislee has decided that naps are for the birds. So with that being said, my morning coffee is pretty much the only thing keeping me from the looney bin.

I have an obsession with McDonald’s Iced Coffee but let’s be real, who wants to spend that much everyday OR drive anywhere before sucking down at least one cup of Joe? Not this girl. But every time I try and make iced coffee, I fail miserably. The coffee is too hot and melts the ice cubes or the creamer curdles or some other giant disaster takes place.
Originally, I wanted to make myself a nice coffee smoothie but to my surprise, it didn’t get very smooth after blending it. It was still super liquidy. Well I’m not going to waste a perfectly good cup of coffee right? So I gave it a try…
HELLO HEAVEN IN A CUP. Seriously. It tasted just like my beloved caramel iced coffee from McDonald’s but with way less calories and cheaper. Count me in, everyday.
So here’s what I did:
Brewed a K-Cup of Caramel coffee (change flavors if you wish)
Splash of soy milk (add however much you like)
2 packets Sweet’N Low (again add as much as you’d like)
Ice
iced coffee
iced coffee
iced coffee
iced coffee

 

And that’s it. No syrups. No unknown substances. You control what goes in it! And it’s only 3 ingredients (well plus ice).
Super easy and will save me a ton of money, calories, and headaches in the long run. Enjoy!
