Day 2: Mexican Dorito Casserole

From the title of this dish, you can probably guess this isn’t going to be one of the healthiest recipes I’m going to make. But when I saw one of the ingredients was Doritos, how could I not make it? That’s like the ultimate “nana nana boo boo, I’m a big kid now and I can eat whatever I want for dinner!!”

However, I did try my best to substitute healthy alternatives where possible and it was AWESOME (husband’s word of choice).

Ingredients

 

Mix all ingredients EXCEPT Doritos

 

Layer of Doritos, chicken mixture, Doritos

 

Last layer, another layer of chicken mix

 

Layer with shredded cheese or slices like I used

 

Finished!

Super easy to make and I will definitely be adding it to the list of hubby’s favorites. I paired it with salad to make it feel a little less unhealthy 😉 If you’ve ever had Max and Erma’s Chicken Tortilla Soup, I’d say this is a close comparison. Enjoy!

Mexican Dorito Casserole
Serves 4-6

2 c. shredded cooked chicken
1 c. shredded cheese
1 can cream of chicken soup (reduced fat)
1/2 cup milk (skim)
1/2 cup sour cream (light)
1 can Ro-tel tomatoes (canned tomatoes with jalepenos-mild)
1/2 packet taco seasoning (or more- to taste)
Bag of Doritos (I only used enough to lightly cover each layer, so about half of the bag)

1. Pre-heat oven to 350-f degrees.

2. In a mixing bowl, combine all ingredients except Doritos.

3. In a greased 2 qt baking dish, put a layer of crushed Doritos, then a layer of the chicken mixture. Repeat once more, ending with a layer of chicken mixture. Top with more shredded cheese (I used slices), cover, and bake for 30-35 minutes, till bubbling hot.
